Best Beef Kofta Recipe

Kofta or Meatballs is a delectable recipe that you must try out. This is an authentic kofta recipe with the perfect blend of spices. The succulent koftas just melt in your mouth. The spices infused in them will make you feel hungrier. 

What is A Kofta? 

A kofta is a meatball. You can enjoy it with a delicious curry, that is made with onions, tomatoes and yogurt. You can also bake your koftas without the curry. 

How to Make the Best Koftas? 

First of all, fry the onions until they are golden brown. Then, add some water to the pot and mash the onions into a smooth paste. If you want, you can transfer the golden-brown onions to a blender to grind them. Once the onion paste is ready, add the ginger garlic paste and oil. Once these ingredients form a smooth waste, it’s time to add the onion paste, yogurt and seasonings. Cook the mixture for some time and add water if required. 

Then, mix all the seasonings with the beef. Once the beef mixture is ready, start rolling the koftas into golf ball-sized meatball. When you are rolling the meatball mixture into balls, use your fingers. Do not use a spoon or spatula as that can turn the mixture into an overworked meat paste. If the meatball mixture is sticking to your hands, you can grease your hands. In this way, the mixture won’t stick. Also, make sure that the meatballs are of the same size so that they cook evenly. If you are not sure about the size, you can use a cookie scoop to make sure that they are of the same size. If you don’t have a cookie scoop, you can pat the meatball mixture in a tray and cut it into even squares. Then, roll each square into a ball. 

If you feel that the meatball mixture is getting too dry or tough, you can add a bit of milk with the breadcrumbs and add it to the mixture. This will keep the meatballs moist and soft.  

Traditionally, koftas are deep-fried before transferring them to the curry. But, to keep this recipe healthy, I have skipped that step. If you want to add some extra flavor to the meatballs, consider browning them in the oven. To brown the meatballs, use a dark baking sheet and place the meatballs in the oven for 10 minutes. 

Once the meatballs are ready, transfer them to the pot. Rotate the pot so that the curry coats the koftas properly. Once the koftas are cooked in the sauce, you can dish them out. Garnish with green chilies and fresh coriander. If you want your koftas without the curry, you can simply bake the koftas.

Tips and Tricks for Making the Best Beef Koftas

One of the most important things that you must remember is that there should be no excess moisture in the meat. Too much moisture can make the koftas break. If the beef is too watery, you can squeeze out the excess water and strain the beef. So, make sure that you dab the meat dry before you use it. If there is no moisture and the kofta mixture is still too soft, you can add some breadcrumbs to the mixture. The breadcrumbs also prevent the meatballs from shrinking. This is because they create a starchy paste that will not let the water squeeze out of the meatballs. If you do not add breadcrumbs, the meatballs tend to become dry, tough, and reduced in size. 

Another essential trick is to use full-fat ground beef instead of lean beef. The extra fat in the beef helps the meatballs bind.  

If you want to make your koftas soft and juicy, a helpful tip is to soak the bread with grated onion. This will make the read puff up when it’s cooking. This also adds a punch of onion flavor and fragrance to the koftas. 

Another tip is that you shouldn’t spoon the koftas to move them around when they are cooking. Otherwise, they will fall apart. If you want to move them, you can rotate the pot gently. 

You can also use minced chicken or mutton to make koftas. It’s also a good idea to use fresh meats (not previously frozen). The other herbs and spices should also be fresh for the best flavors and fragrances. 

If you like an extra tinge of garlic in your meatballs, feel free to add double the garlic. The garlicky kick with the spice makes the perfect combo. 

If you are making the koftas ahead of time, you can freeze them. Just cool them down and place them in a Ziplock bag. You can store them for up to a month. With this authentic kofta recipe, you can enjoy this traditional dish whenever you want! 

What to Serve with Koftas? 

Pakistanis and Indians usually enjoy koftas with chapattis or naans. You can also eat them with spaghetti or bread. If you plan to eat the koftas with spaghetti, you can also try adding cheese. This will make the flavor quite different from the traditional ones, but meat adds a lot of flavors to the meatballs. The options are unlimited!

If you want to get a little fancy, serve the kofta curry with boiled eggs. It adds a hearty flavor to the dish and makes it more satisfying. Baked potatoes also compliment koftas really well. 


  • 500 gm minced mutton
  • 1 teaspoon ginger powder
  • 6 tablespoon vegetable oil
  • 4 cloves of garlic
  • 1 1/2 teaspoon red chili powder
  • 3 tablespoon yogurt (curd)
  • 3 crushed black cardamom
  • 3 pinches salt
  • 1/2 teaspoon garam masala powder


  1. Heat the oil in a pot and add chopped onions to it. Fry the onions until they are golden brown. 
  2. Grind the onions with a splash of water to make a smooth paste. Add ginger-garlic paste to the onions. 
  3. Add yogurt, salt, red chili powder, coriander powder and turmeric to the pot and cook. 
  4. Mix the meatball ingredients and roll the mixture into balls. 
  5. Cook the koftas in the pot with the curry. 
  6. Serve immediately.
