Biryani is considered one of the most popular dishes in India . It has a special test and design. It consists of three layers.The top and the bottom layers are the rice , and in the middle layer is the chicken.
Ingredients:
- A whole chicken
- Plain yogurt
- 4 cups of basmati rice
- Garlic
- Ginger
- Mixed spice
- Ghee
- Onions
- Fresh Parsley and cilantro
Preparing the chicken:
- Whole cut chicken ( make few slits on every piece )
Add to the chicken
- 7 tablespoons of plain yogurt
- 2 tablespoons of garlic
- 1 tablespoon ginger paste
2 tablespoons of masala spices if don’t have you can use this mixed powdered spices ( turmeric, paprika, cumin , chili, coriander, and mustard power)
- 1 lemon juice
- Fresh cilantro
- 1teaspoon salt
- ½ teaspoon black pepper
It is preferable to leave the chicken in the refrigerator for half an hour or more
Rice Preparation :
- Wash the rice unit the water becomes clear and soak it for 30 minutes
Cooking:
1-Fry these spices with 4 tablespoons of ghee or any oil you have for 2 minutes
- 3 pieces of bay leaf
- 4 green cardamoms
- 6 cloves
- 2 inch cinnamon piece
- 2 star anise
- 2 strand mace
2-Then add 1 big chopped onion until it becomes golden
3 – add one teaspoon of fresh minced garlic and ginger
4 – pour the chicken mixture with keep stirring it for 5 minutes
5 – close the pot cover and leave the chicken with Medium heat for 15 minutes( until the chicken cooked)
6 – add 3 tablespoons of yogurt in to the cooked chicken
7 – in another pot cook the rice with a medium Cook then drain the water
8 – apply 2 tablespoons of ghee or any oil you prefer into the pot, then add one layer of the rice
9 – add the chicken as a second layer
10 – finally add the rest of the rice with adding pinch of saffron , butter ( or any oil ) , and fresh chopped mix parsley and cilantro.
